Ahh the warmth of the sun, the sound of birds singing, and spring has finally arrived. Nothing pleases me more than eating food, but eating food outside is my all time favorite. I just don’t know what it is about the fresh air, but it’s just the ultimate relaxing thing for me. Now I know this may not look like a traditional picnic, but all the food you see can be packed up easily into containers and taken for a ride or walk to somewhere special and eaten on a blanket. I wanted to keep things light and refreshing so I decided to make a green onion pie, apple bacon pecan salad, and for a special treat apple fried pies. Needless to say the fried pies were gone in a hot minute, my dad is a sucker for those things… regardless of what you decide to make, my suggestion for the week is to take time for a picnic. Enjoy the beauty of spring..after all she only comes once a year…
green onion pie
1 – 10in cast iron skillet
2 T. butter
3 slices of bacon – cut into small squares
4 button mushrooms – sliced
1/2 bunch green onions – sliced in half lengthwise
1 T. balsamic vinegar
1/2 C. milk
1/2 C. flour
salt & pepper
- preheat oven to 400 degrees.
- begin by heating skillet on stove over medium high heat. place butter in skillet and melt. begin to cook bacon until almost crispy.
- leaving all the dripping and the bacon in the skillet, add in sliced mushrooms and green onions. cook until mushrooms are tender.
- add in balsamic vinegar. then remove pan from heat.
- using a small bowl whisk together 3 eggs, 1/2 C milk, 1/2 C flour and pinch of salt and pepper.
- pour egg mixture into skillet. place skillet into pre heated oven for 20 – 25 minutes.
- serve immediately and enjoy
apple bacon pecan salad
combine mixed greens with 1 small diced apple, cooked bacon, and chopped pecans. sprinkle on feta cheese. top with dressing of your choice. i used a bottled raspberry – walnut vinaigrette.
apple fried pies
make my molasses cooked apples recipe. then let apple mixture cool. use a store-bought pie crust and cut into circles. fill each circle with 2 T. of apple mixture. crimp edges of each round closed with a fork. fry in vegetable oil until golden on each side. dust with powdered sugar.
