Do you ever have a craving for just a really good sandwich? The kind on white bread with all the fixins?Back home people believe in serving things on white bread, I now live in this fancy city of chicago, where apparently people care about their health and nutrition, so I’m forced to suffer in silence and eat bread that tastes like grass. I decided to lightly flour and pan saute my chicken tenders that I marinated in pesto, top with some bacon, cheese, lettuce, oh the list goes on of all my toppings. So just read the recipe..and don’t judge, I don’t eat this way everyday, but sometimes a girl just wants a white bread sandwich…

pesto chicken club

2 chicken breast tenderloins ( or one large chicken breast cut in half )

4 T. pesto sauce – ( a jar sauce is fine, or homemade is great if you have it )

1/4 C. flour

2 T. olive oil

4 slices white bread – toasted lightly

4 slices bacon – cooked

2 slices provolone cheese

2 lettuce leaves

2 T. mayonaise

2 T. spicy mustard

  • begin by placing chicken on cutting board and lighlty pounding chicken tenderlions or breasts into a flat cutlet size.
  • next start marinating raw chicken in  4 T. of pesto sauce. ( i place chicken and sauce in plastic zip bag and squish all around ) let meat marinate for 30 minutes.
  • heat olive oil in saute pan to medium heat.
  • using a small plate or small bowl, place 1/4 C. flour inside. remove chicken from zip bag and coat chicken with flour.
  • place floured chicken into pan with the heated oil and satuee until chicken is browned and cooked through.
  • now begin to build your sandwich. slice of toasted white bread goes on plate first.
  • place chicken ontop of bread, chesse on top of chicken, bacon on top of cheese, lettuce on top of bacon, then spead top piece of bread with mayo and mustard. cut sandwich on a diagonal for easy eating.
  • serve and enjoy.
