Am I hungry? check… Do I have absolutely nothing in my fridge? check…Do I open and close the fridge door a hundred times with the hopes an idea will spark?…check… I am beginning to wonder about my cooking skills, no I am not a skilled or trained chef, but I am also not the at home “follow the recipe” kind of girl either. I blame it on my parents, as any good kid would do, my papa and I would have ready-set-cook dinner dates (for anyone who watched the early food network shows you remember this one…) we would take a bunch of random ingredients and see if we could come up with something edible. I find I still cook this way, never actually setting out to make a particular dish, but just see what comes to life. So how did I get my ingredients for this “dish”? Last time I was at my parents I stole the last of some orecchiette pasta from my momma, she hated it – said it stuck to the bottom of her soup pot and she wasn’t gonna use it ever again. So long story short, a few vegetables have managed to produce themselves in our family garden, not enough for a meal, but just enough for me to play with. Playing with food is my passion, sometimes it may get me in trouble, but most of the time it turns out all right. So my advice for the week, play with your food, you just my never know what it might bring….
orecchiette with vegetable ragu
1/2 lb cooked orecchiette pasta
2 yellow squash – diced
1/2 onion – diced
2 sprigs fresh rosemary
1/2 can cannellini beans
1/2 jar store bought marinara sauce (I know – I know- I don’t like this stuff either, but I was in a hurry)
-sauté onions and squash in olive oil until cooked tender.
-add in rosemary and beans.
-add in sauce and heat through. then toss in pasta and coat well with sauce mixture.
-serve with parm cheese if desired.
